Oh. Did I tell you what the ingredients are?? Couscous, homemade pesto, scallions, dried cranberries, chicken breast if you want the meat, and a smidge of sea salt (either in the pesto or in the final product. I think in the pesto is the best place for the salt because it is easily distributed via the food processor). You could probably add some freshly ground pepper - but I didn't want to mess with it too much since everyone was going to try it.

Any suggestions for what else should go into it?? I have a feeling this dish will be evolving!

Yes. That is it! Making the pesto takes a little time (I don't follow a recipe, so I just eyeball it and have to make adjustments - but I think it comes out a lot better. I hate recipes for Pesto!) making the chicken takes time - but yes. It is super easy! I'm glad it came out since I had never made it before :) Let's talk about it, I can give you a "sort of" recipe for it!

Okay! Let's talk about this couscous some more. It was super good.

So, all you do is make pesto and then mix it with the other ingredients and tada you are done?

Hi Heather! Yeah, I'm a bit freaked out by my recent consumption of diet coke. I had a couple last week and then another one today. I think I need to switch back to my herbal tea in the afternoon. Diet coke freaks me out, too!! (I just read your post on diet coke on your blog!) Olga's Cup & Saucer is a local place in Providence. I love their pizza shells!! Here is their website: http://olgascupandsaucer.blogspot.com/ :) I'm thinking about having a veggie burger tomorrow and the avocado will go perfectly on it - thanks for the idea!

Hi Marilyn: You're right. When you cook things yourself you can really dictate how much salt and / or sodium goes into something. When I cook with beans, I always try to rinse them if they are canned to reduce the sodium. I am also really glad to see a few brands out there are coming out with lower sodium versions of canned beans. Of course the best thing would be to make your own beans - which I'm going to try to make time for this weekend. I have a great bean in the crock pot recipe which I am eager to try. Stay tuned - I'll let you know how it works out!
