Hi All-
Just a quick post over lunch to make up for the lack of a post last night. I will go into greater detail on my eats later on – but a brief recap:
breakfast: kashi instant oatmeal with a tablespoon of Barney Butter – the best combo ever, especially on a super cold winter morning! My morning yesterday was so crazed I did not have time for breakfast until 10am.
Lunch: Apple, whole wheat crackers, mini babybell, and 1/3 cup of egg salad that my mom made (in case you are wondering – the secret to an awesome egg salad is no mayonnaise, and use a teaspoon of dijon mustard instead, and a lot of freshly ground black pepper! It is sooo good!)
Afternoon snack – an awesome cupcake, thanks to Jane and a cup of coffee.
5pm: running. 3.2 miles in a half hour. I was so relieved to get to the gym last night! After the run, I went to Mark’s for dinner. I arrived at 7 o’clock. Mark is an adventourus cook, which I really appreciate. I love trying new recipes! I also like that he is willing to cook with ingredients he has not used before…. tonight, he cooked with tofu for the first time! The end result was fantastic.
Here is the recipe we (I should say Mark, because I barely helped!) followed:
I loved this recipe! Even though we only had “firm” tofu, it still cooked up really well. I was starving after the run, but a small handful of almonds kept me going until dinner was ready. I along with my tofu meal, I had about 1/2 cup of white rice. (What a treat!)

Well, that about wraps it all up. I highly recommend giving this new recipe a try if you like curry and tofu! It is a winner, for sure.
