…’til vacation!
That’s right. I’m going on a sort of mini-vacation and I only have one more day of work this week! I am so excited. I actually cannot remember the last time I went on vacation. I was getting so excited for vacation, it was sort of hard to concentrate at work today. But I managed to have a productive day anyway. I only did a little bit of day dreaming about my get away to Block Island. I have never been to BI, so I cannot wait to explore and relax on the island.
Mark and I were in Connecticut this weekend, and I did quite a bit of snacking. We started Friday night with a cheese burger and an amazing salad. I took a picture of the campfire instead of my plate (it was dark):
Saturday the combination of snacking and healthy food continued. I did not document anything, really. Which is sad since Emilie and I made our first loaf of homemade bread (via bread machine) together! It was really great, and on Sunday Mark turned a few slices into an amazing breakfast of french toast. Sooo good.
So, today (Monday – my least favorite day of the week) I decided to get back on track, for the two days I had before vacation started 🙂
Breakfast was oatmeal. So exciting.
A little while later (at around 11) I snacked on some homemade trail mix. Dried cranberries, peanuts, and semi-sweet chocolate chips. I had packed about three tablespoons. (one tablespoon of each) It really hit the spot and got me through until lunch.
Lunch – a salad and a piece of whole wheat pita:
Mushrooms, broccoli, carrots, corn, chick peas, mixed greens, chicken, etc. For a dressing I used a drizzle of evoo and balsamic.
My afternoon snack:
I love seltzer. It can be a real pick me up during the afternoon. (Best part? It’s caffeine free!) I had a piece of my Babybel cheese, and tossed the rest of it. As a lot of you know, I have a very tenuous relationship with cheese. The other day I had a babybel that had maybe been sitting in the fridge for too long. Eww. Ever since, my relationship with Babybel has not been the same. Sigh. My crackers were a hint of salt Wheat Thins. I love these crackers, because while they are low sodium, you still have a little bit of salt to bring the other flavors together too.
On my way home from work I stopped by the bookstore and Target. At the bookstore, I picked up three paperbacks, and I had a coupon for 25% off my entire purchase. Yay! I’ll let you know which books I read on vaca, and how they are…. stay tuned.
At Target I picked up a couple of travel sized things, and some other things for the house. While I was running errands, my mom stopped by Whole Foods and picked up some great things for dinner. This is going to sound totally lame, but sometimes I don’t know where I would be without Whole Foods. Seriously.
Tonight, I really did not have a ton of time to make dinner. I had no idea what I was going to have. Mom saved the day with a Olivia’s mixed greens, edamame and tilapia (already cooked – I just heated it up in the oven for us). I hard boiled an egg, steamed the edamame, and chopped up some other veggies for the salad. The final product:
The pieces of fish were small, and the salad was great. A sort of small dinner, and I was still a bit hungry after… dessert tonight is chocolate and farm fresh strawberries. Holy yum! I’m in the midst of laundry, and must start packing soon. I have no idea what to bring!
