I am going to try these granola bars soon. I was at the grocery store yesterday, and I walked by the granola bars. I picked up a box and read the ingredients. The list was long and complex. [And this was in the natural food section!!] As I was reading and frowning, I remembered this YouTube video by Mark Bittman. I have a lot of the ingredients right now, but not all of them. I think I am going to check out the pantry and see if I can substitute things so that I can make the granola bars today! It would be a great snack to bring to work.
For the recipe, check out Almond-Apricot Granola Bars at the New York Times.

The video is great! I have regular rice krispies leftover from a Christmas recipe. I think I’ll try this–what’s in granola anyway? Maybe that can be pieced out with oatmeal and other things that one might have on hand. The final product looked yummy!
