More than one person said that we all had a case of the Mondays today. I know that I certainly did. The last time I looked at my alarm clock last night it was 12:25 AM. My alarm was set to go off at 5:40. I was really not happy. So, I got a couple of hours of sleep and felt like a zombie this morning. But somehow I got my day started at 5:40 when my alarm went off. 😦
I toasted a mini-whole wheat bagel in the toaster oven and added peanut butter to it. I ate my breakfast in the car, along with a nice travel mug of coffee with soy milk. Before lunch time today I hit up the dreaded candy jar at work. (I hate this thing some days! But since I have been back at work I have done a pretty good job avoiding it.) When I am tired sometimes I have a lot less will power. Thank goodness I packed my lunch the night before. I was looking forward to lunch all morning… I was so happy for this amazing salad:
Spinach, red peppers, orange peppers, tomato, cucumber, carrots, sliced almonds, chicken breast and Annie’s reduced fat goddess dressing. Can I just tell you how happy I am to have Goddess Dressing back in my life!? One day, many years ago, I must have bought a bad bottle of it. It just tasted weird, it was not the right consistency and it sort of freaked me out. I went about two years avoiding Goddess dressing – which was so sad because it is my favorite dressing. I got into making my own dressings, which I still love to do. But on Sunday, I saw (for the first time) a reduced fat Annie’s Goddess dressing. I did not even think about it – I just threw it in my basket. L – O – V – E. It made my salad soo special and wonderful.
I was starving at lunch. Insanely hungry. Famished. It was strange. I had planned on my salad and a low fat Stoneyfield blueberry yogurt. I added a Larabar after I ate both parts of my meal along with 16 ounces of water and I was still hungry. The Larabar (thankfully) did the trick.
I had my pre-run snack at 4:15 as I was driving to the gym. Three whole wheat fig newtons. They did the trick. At 5:25 I was on the trail. I ran 4.1 miles in 38 minutes today. For the first time ever I ran without a water bottle. It was perfect running weather: overcast, and upper sixties. I loved it.
I was so happy that dinner was all set for me when I got home. I was really hungry still, so I decided to make a salad to go with dinner. As I was thinking about my salad, I realized that because I have large salads at lunch I often do not think about having a salad with dinner – isn’t that funny?
Dinner looked like this:
After dinner I had a glass of light soy milk. I also prepped tomorrow’s smoothie and packed my lunch…
Tomorrow’s smoothie will be the following:
Plain yogurt
1 small banana
4 strawberries
1/2 cup blueberries
1/8 cup rolled oats
1 scoop chocolate whey protein
1 T PB2
1 Tsp Chia seeds
1 Tsp flax seeds
I am already looking forward to tomorrow’s breakfast…
