So, I woke up this morning telling myself that today is really Thursday. Thank goodness I remembered. I had an important day at work. I had to put on a dress and some fancy shoes instead of my normal tee-shirt and jeans uniform for work. I am not going to lie. It was really fun to dress up and look pretty for work today 🙂
Yesterday I ran out of Greek yogurt. So, I skipped my normal breakfast smoothie. Instead I had a Kashi chewy granola bar. It had six grams of protein in it. I ate it around 7:30 AM and I was not able to eat again until about 12:30 this afternoon.
Thankfully I had packed another wonderful salad, and a hard boiled egg, a piece of bread and some peanut butter. I was having one of those days at work, and I was starving when I was finally able to eat lunch.
The salad was pretty:
The 12 grain bread and peanut butter was crucial to me surviving my day at the office:
At about 2:30 or so I was still starving, and things were stating to calm down at work a bit. I took a couple of minutes to run and get my Greek yogurt out of the fridge, and I ate that as well.
I honestly cannot say enough about the Chobani 2% yogurts. I love them. the mango, pineapple and strawberry and banana flavors are my favorites.
I got to work at 7:15 this morning and I was able to leave at 3:45. Not a bad day. But definitely a busy one. Thankfully I had someone to talk to on the phone (handsfree of course!) on my way home. It was a great conversation, and it kept me awake and alert the entire time – yay for that!
Once I got home I was sent on a mission to buy beer for our house guests (and for myself). With the help of one of my beer connoisseur friends, I settled on Harpoon Summer, Long Trail Pale Ale, and Sea Dog Wild Blueberry. All of the beers were a big hit.
I was in charge of the real welcome home dinner tonight. Remember when I made pesto on Sunday??
Well, after it was made, I popped the pesto in the freezer until this afternoon. If you are ever making pesto a couple of days, weeks or months before you are going to eat it – you can totally freeze it. Just wait to add the cheese until you are about to eat it – the day of. I learned that tip from Mark Bittman.
Tonight’s dinner was whole wheat spaghetti, organic chicken sausage and pesto. It only took me about thirty minutes to put the meal together and it was pretty good. Everyone was a member of the clean plate club 🙂 I plated everyone’s dinner and then made myself a smaller plate because I knew I would be having leftovers for lunch tomorrow.
We ate out on the deck. I sipped a Long Trail Pale Ale with dinner.
It is almost Friday, and I do not know about you – but I cannot wait for the weekend. I am looking forward to getting some running, reading and relaxing done. See you tomorrow!
