Monday’s Recap

Happy Tuesday morning everyone. I hope that your week got off to a great start with a productive Monday.

My Monday was pretty great, as far as Mondays go. (Not my favorite day of the week.) It took me a long time to get to work because I left the house at 6:30 instead of 6:00 or even 6:15. This put me waaaay back in my commute to work, and it was my own fault. While I got up at a fairly decent time (5:45 AM) I had not finished packing my lunch the night before, so I spent an extra 15 minutes making a half of a turkey sandwich and searching for small containers for both salad dressing and peanut butter. It is amazing what a huge difference 15 minutes can make during one’s morning commute.

Oh well. I survived the drive to work. Breakfast on Monday morning was a bagel thin with peanut butter – a tablespoon or less:

Not really pretty, but it got the job done. I had breakfast a few minutes after 8 o’clock and thankfully did not need to snack in between meals.
Lunch was great on Monday. An amazing and beautiful salad full of fresh vegetables along with spinach and arugula, that I made on Sunday and a turkey sandwich on a piece of When Pigs Fly sour dough bread with dijon mustard. I put some spinach and arugula from my salad onto the sandwich and that made it even better.

It was a busy day at work and I left the office at 5 o’clock. Surprisingly I had a great commute home. Who would have thought? It really made my day so much better. I got home a few minutes before six (yes – it took me less than an hour to drive home!!) and somehow found the energy to go out for a run.

The weather has been really kind of disgusting lately, at least in my book. I hate hot and humid weather and that is what we have been having for about a week. I refused to run outside all weekend and instead went to the gym on Friday, Saturday and Sunday. Yesterday I decided to run around my neighborhood instead of commuting to the gym. It saved me a good 35 minutes by not driving to the gym (it’s a good 15 minutes each way). I ran 3.75 miles last night and it was rather horrible. I did not take my water bottle because I had intended to do one mile loops around my house… but half way through the first loop I decided to change course. I thought that if I kept running by my house I might be less inclined to run as far as I wanted to – I wanted to do at least three miles. So, about two and a half miles through my run I was kicking myself for not bringing water. But I survived and managed to carry on.

When I got home my mom had already picked up dinner – a pizza. So I had a big salad and two pieces of pizza.

I wanted three and I was happy that I could get by with only two pieces. No dessert was consumed, and I went to bed feeling a little hungry.

I got into bed around 8 o’clock, where I watched the Red Sox loose again but I also enjoyed reading The Leftovers by Tom Perrotta.

That is about all I have to report from yesterday. Once the weather gets cooler and more autumn like, I look forward to doing some cooking and blogging about the fall meals I make. I cannot wait to roast a chicken, make some chili, and eat some comfort food.
