Saturday Morning

I have two favorite times of the week. Saturday morning and Sunday morning. But if I was forced to pick one, I think I would go with Saturday morning because you have almost an entire weekend ahead to look forward to.

Right now I am drinking coffee with milk, relaxing and catching up on a few things. It is just after 9 o’clock in the morning and I have a few things to do on my agenda – but I feel no rush to get started. I just love that feeling.

It was a loooong work week for me, but it ended on a positive note, for the most part. I did not post much about food, because I was eating lots of different things all week and everything was good but nothing was super exciting to write about. Here is a brief recap with a couple of photos:

Breakfasts this week were mostly whole wheat english muffins with about a tablespoon of peanut butter. Morning snacks were cantaloupe (really glad that cantaloupe is coming back into season!).

Lunch consisted of usually a small soup from the caf or a greek yogurt with at least three servings of vegetables and fruit. I ate cherry tomatoes, carrots, strawberries and blueberries during my breaks (I re-used the plastic bags for the fruits and vegetables for a couple of days as not to waste more than I already was). I also went on a walk whenever it was not raining.

It was surprisingly cool this week – which I loved – and it was a great week for soup.

One night for dinner mom and I had an amazingly perfect autumn dinner:


Grilled chicken, mixed greens, roasted squash, a piece of french bread and an apple and cheddar fritter (can you say perfect fall food item???) This was a great dinner and we had all of the main food groups included on our plates.

I went to the gym and worked out every night except for Friday – after a morning of appointments and an afternoon of work, I would have fallen asleep on the treadmill. But I was happy that I made it almost every day this week.

On Thursday night Andy and I went out for Mexican food with mom. He surprised me with beautiful flowers – they really made my day!


That about wraps up my week. I hope to get some cooking in this weekend, if I do I will certainly report back. Happy weekend, everyone!
