Hi there, everyone!
So far I am sort of enjoying the couple of days I have been basically trapped in the house and snowed in. Thankfully I was really prepared with a lot of healthy food – so that really helped a lot. The other thing that has made things manageable is that I did not lose power for too long. On Friday night the power went off several times but came back on within a few minutes each time. I am so thankful to have heat, water, and power right now!!! I was a little nervous when I woke up at 8 AM on Saturday, but I immediately felt better once I realized the power was still on!
Last night I cooked a really nice and healthy dinner for myself. As you might remember, I baked a nice chicken breast on Friday afternoon. So for dinner I needed to use the chicken. I wanted something that I would have leftovers just in case I did lose power for a day or two. I was craving pasta and vegetables. I developed a chicken and vegetable ragù and had it over Whole Foods pasta.
I chopped up onion, and garlic and sautéed it in a little bit of olive oil. Then I steamed some fresh broccoli and cauliflower, chopped them and threw them in the pan. I finished the vegetable base of mushroom and spinach.
Once the vegetables sautéed, I added a Trader Joe’s tomato sauce and the final step was to add the chicken.
The meal was topped with some grated WF mozzarella cheese. It was really good and hearty!! I have leftovers for lunch today.
This morning I woke up, made coffee and was immediately feeling a severe case of cabin fever. How much television and reading could I possibly do? It was only Saturday morning. I already felt like it should have been Sunday night!

Thankfully my best friend came up with a great idea – an at home work out via Dr. Jordan Metzl. I googled him and I found a great workout that was right on Runner’s World’s website. I did the workout for over an hour and I loved it! I felt so much better after.
Once I showered and changed, I whipped up a nice and fresh breakfast. I was quite hungry after my workout! Breakfast consisted of fresh fruit (pineapple, cantaloupe, raspberries) and a piece of toast with WF all natural almond butter. Yum.
