Blizzard

Over the weekend we had our first blizzard of 2017. I hope it is our only blizzard of 2017 – but you never know.

For this blizzard I was with my mom at her house, and it was nice and cozy with the fireplace going almost all weekend!

We started our Saturday with some amazing oatmeal. I loved starting our blizzard on such a healthy note. For me, sometimes if I’m snowed in for a weekend I use it as an excuse to eat a lot. I’m so thankful this did not happen this weekend! This oatmeal was delicious and pretty healthy. I topped it with half a banana, a sprinkle of brown sugar and a spoonful of peanut butter.

I snacked through the afternoon on clementines and decaffeinated tea. Along with my mom I cooked some turkey chili that we would have for dinner on Sunday (we love cooking chili the day before we want to eat it because it always tastes better the next day!)

Because we had so much time, we also made twice baked potatoes for our actual dinner. Mom baked the potatoes and then scooped out the potatoes and we added sour cream and then we had the toppings – steamed broccoli, scallions, and bacon.

I can’t tell you how good this is on a cold, stormy, snowy night. It was true comfort food. And with all of the toppings we both only had one half of a potato for dinner! I topped mine with a little bit of the turkey chili…

Besides cooking, I did a lot of reading this weekend and watched a couple of movies. Tonight we are having fun watching the Golden Globes with a piece of leftover (amazing) chocolate birthday cake! Because of the snow we had a lot of plans cancelled this weekend – but it was a nice and relaxing couple of days. Sometimes not being able to go out and do things are just what you need, an excuse to take it easy and relax.
