Sorry for not posting for a few days. Wednesday night I went to bed with a horrible headache, and got a later than normal start on Thursday. But I also made stove top oats for breakfast, which were such a treat on a work day! I finally made the oats the way I remember then from when I was little. The trick? Adding the oats at the beginning of the process and not waiting for when the milk or water is already boiling. It makes a HUGE difference! The oatmeal is a lot creamier. I mixed in a teaspoon of ground flax before putting the oats in my bowl, and then added some raisins, a couple of slivered almonds and a small spoonful of Barney Butter. Yum.
I was still waking up at the time I was putting together the bowl of oats, and the cinnamon and pumpkin spices would have gone a long way — but breakfast was good anyway!
The oatmeal went a long way in getting me through my day. I had lunch late, around one o’clock. I forgot to take a photo, but had a tuna sandwich on Arnold’s protein bread along with a few carrots.
For a snack later, I had a Cliff Z bar… yum!
Even though I got to work a little late on Thursday, I was still exhausted at the end of the day. I took the night off from the gym since I still was not feeling 100%.
Ben ordered Chinese food for dinner and I had a cup of wanton soup, which was really nice… and not really photo worthy.
Thursday was not my best day! I am sort of surprised I made it through the work week..
