Sunday morning, waiting for more snow…

Hey Everyone:

After a couple of “warmer” days, we are now waiting for snow to arrive.  I guess we’re expecting it this afternoon. I wonder how much snow we’ve received so far this winter, I think the last time I checked we were at about 50 inches – our normal amount for a season is 12″. Wow.

I don’t think I did a posting this week at all.  This week was such a struggle for me. this is usually the exact time of year that I get sick and I think my body was working over – time to keep healthy!  I would get home from work, and I was just exhausted.

Here is a brief recap of some of the food from this week.

On Monday morning (a holiday!) I made French Toast with some left over sour dough bread we had in the house. I love making French toast with sour dough because the sweet and sour combines for the perfect flavor.  Here is a picture of one of the pieces of French toast… I cut the sour dough bread in half before putting it in the batter…

Later on Monday I started making macaroni and cheese to bring over to my friend’s house.  I also made a little dish for Ben and myself – which we enjoyed!

I made the bread crumbs by putting a few pieces of whole wheat bread into my food processor.  Once they were pulsed into crumbs, I poured them out onto a cookie sheet and seasoned them with ground pepper and touch of sea salt. I baked the crumbs at 350 for about twenty minutes, and then they were nice and crunchy. I love mac and cheese when baked in the oven, with bread crumbs! Yum!

During the week I woke up earlier than normal and enjoyed breakfast at home for a change. A few times I had oatmeal with a glass of milk and added Aria protein powder. This breakfast was amazing, and got me through to lunch without a problem.

I took my lunch to work most days this week.

On Tuesday I took mac & cheese with me…

The rest of the week I brought sandwiches. One day of almond butter and jam, and two days of turkey…

On Friday, Ben was in charge of bringing breakfast to his colleagues. We went to Dunkin’ Donuts early on Friday morning.  I decided to get a coffee and bagel for myself – not a bad breakfast for a Friday! The bagel was a whole wheat multi-grain.

Later on Friday I had a snack of Trader Joe’s vanilla yogurt and an Emergen-C because I still felt like I was on the verge of getting sick.

I’m hoping my Immune Defense drinks will keep me healthy!
