Hi All –
Well, tonight I am having some problems with my picasa web up-loader tool… so I’m starting the post in hopes that I might have photos to upload at the end of my typing!
As you might recall, Saturday started off with a fantastic bowl of oats that I made with fresh fruit and TJ’s unsalted almond butter – yum! A few hours later, I decided to make a turkey sandwich on Arnold Sandwich thin bread… it was awesome.
I put the bread under the broiler for just a few minutes, I broke a piece of Swiss cheese in half and put one piece on each side of the bread… once melted I then added my favorite mustard (Jack Daniels mustard!) two slices of reduced sodium turkey, lettuce, tomato, cucumbers, and a little bit of veggie hummus…. a fantastic sandwich!
We had a busy Saturday afternoon and evening (shopping) and it was not very conducive to food pictures or eating… so forgive me as I skip ahead to Sunday. 🙂
Sunday morning I had the most amazing healthy version of my favorite breakfast sandwich! Here is a photo:
I used a page from Tina’s play book in making this awesome egg sandwich…. I put my egg whites in the microwave for 90 seconds, and then put the egg whites right onto my english muffin… of course I put the english muffin under the broiler with a small amount of 50% reduced fat cheddar cheese (Cabot brand) and I think it was a combo of the carbs, protein (from the egg whites) and fat (from the cheese) that kept me going for (get this!) six hours!! That is almost unheard of for me! Oh, and I can’t forget about the awesome cantaloupe I enjoyed with the breakfast sando.
As for other activities on Sunday, my fam and I went to church and after that Ben and I went to the gym for about an hour to do weights and cardio before an awesome lunch with my mom and sister.
Wow. Without Picasa working today, this post took a while! I’ll be back tomorrow hoping that my uploading app is working…
I hope everyone is having a great week thus far…. Ben and I got up super early this morning and I made it to work before 8 o’clock this morning – love it! We packed our gym bags last night, and went straight to the gym after work. I did about a half hour of weights and then 15 minutes on the elliptical and another 15 minutes on the ERG (I felt like I was back in college and on the crew team…. kind of freaky!) tomorrow I will post on today’s food (here is a hint – for breakfast I had quaker’s banana bread oatmeal – shocking!) and tomorrow’s food 🙂
