Breakfast · Lunch


Hi Everyone –
Happy Tuesday! I hope everyone is having a great day. It sure was nice to see the sun and the warmer temps this morning after a day of snow, ice and freezing rain!! (Not the best way to start off a work week, huh?)
I got to work a few minutes before 8 o’clock again today – I’m so proud of myself! I would have been earlier – but I dropped Ben off at his office, which is a “slight” detour, which I never mind. I love starting my day off in the car with him! It’s so relaxing and fun for me.
Anyhow, I did not sleep well last night (weird) and was not able to get up as early as I did yesterday. I am hoping tonight I will get a better night’s sleep… because of the late rising, I wasn’t able to make my awesome egg white / English muffin sandwich that i had been looking forward to… Instead I had to pack my breakfast and throw something together at work. Because of this, I decided to go for an easier option… a Light whole wheat English muffin (100 calories) and a little less than a tablespoon of Barney Butter. I had this breakfast at around 8:30 this morning and it kept me going until lunch at 12:30 – not bad!

All in all, it was a pretty good breakfast – even though it wasn’t what I was planning on…. I also could have used some fresh fruit to go with, but I’ll have to pick some more up at the store today or tomorrow!
Lunch…. was perfect!!! This morning I spent most of my meal prep time on my sandwich. It was certainly time well spent! I used a Rubermaid container to put all of the pieces of my lunch in, since I wasn’t going to “build” my sandwich until lunch time came around.
The container had in it:
two leaves of green lettuce
2 pieces of tomato
1 tablespoon of garlic hummus
2 slices of deli turkey
1 piece of Sargento reduced fat jalapeno cheese (yum! it really added some spice to the mix!)
3 dill pickle slices (so great!)

This was all put on top of an Arnold whole wheat sandwich thin. I toasted the sandwich thin first, with the cheese on either side (funny fact about me – I only like cheese when it is melted!!) and once the bread was toasted and the cheese was melted, I piled the rest of the sandwich on and enjoyed!

All together, the sandwich was 215 yummie calories. I also enjoyed 120 calories of baked potato chips on the side.  Lunch was a total of 335 calories, putting me at 525 for the day so far.
I did not have an afternoon snack until 4:10 this afternoon… and when I did, I forgot to take a picture of it… but it was Mott’s Healthy Harvest Granny Smith Apple Sauce (no sugar added – so it has a great tart flavor which I love!) I really think this is such a great afternoon snack. I ate the entire little container (3.9 oz) and it is only 50 calories! Just in case I was still hungry, I had a Honey Graham Zbar waiting at my desk…. but I didn’t need it.
That is about a wrap up of this morning and afternoon…. Ben and I have some errands to run after work (I get to go to Crate and Barrel – one of my favorite stores!!) and I’m starting to wonder what to have for dinner….
