Hey All –
Ben and I had the best time camping and hiking this weekend! It was a little bit hard to get back to the real world / work world this morning, but I certainly did feel refreshed after a long weekend off.
This morning I opted for a ‘simple’ breakfast of instant oatmeal… I had some Quaker oats left over from camping (a good and easy camping breakfast!) and took a package to work with me.
I also had about 12 ounces of coffee with 1% milk. It was a good breakfast!
At lunch I had a great salad with grilled chicken, veggies and half a hard boiled egg from Au Bon Pain… oh and an everything bread stick! I was surprised that the meal kept me full for the rest of the work day….
For a dressing I used a teaspoon of olive oil and a tablespoon of balsamic vinegar. I think the salad was a perfect combo of fiber, protein, healthy fat from the olive oil and carbs from the bread stick.
When I got home from work I had a snack of a Trader Joe’s wheat bran blueberry muffin. A wonderful 80 calorie snack!
This afternoon I got good news at work – and to celebrate Ben made a really fun dinner… turkey BLTs! We went to the market together to get turkey bacon, crusty bread (my favorite!) lettuce, tomato, hummus, and produce for the rest of the week.
On one side of the bread we put roasted red pepper hummus, and Ben toasted the bread in our toaster oven with a drizzle of olive oil. Here is the final product:
I had a couple of pieces of water melon on the side 🙂
It was a great dinner… along with the sandwich I had a glass of skim milk. It was totally filling and satisfying!
