Hi Everyone!!
I do apologize for not being able to blog on Monday or Tuesday. I promise tonight will have a nice re-cap of the week’s food. The good news? We got to the grocery store!! I’ve been having some wonderful spinach based salads for lunch and dinner mostly this week – they are really fantastic with carrots, grape tomatoes, cucs, and red peppers. I also made a quick batch of cous-cous which I have been enjoying with the salad. A great combo.
On Monday I got to the gym and did 30 minutes of strength training and 15 minutes on the elliptical and 10 minutes of walking. Yesterday the SUN finally came out and I got to take a great 50 minute power walk… it was glorious!
Tonight I will download the photographs and post a nice blog entry about the food, etc. of the week so far. Stay tuned! I also wanted to thank everyone for their comments the past few days. I feel like your comments and feed back just make the blog better and better – so thank you!!
