Hello friends & readers 🙂
Happy Thursday to everyone! I think this week has gone by pretty quickly. I was so happy to see the sun for at least part of the day today! What a difference it made.
I was totally lame when it came to getting up this morning. I finally got up at 7 o’clock and started getting ready for work. Ben’s train to work was horribly delayed, so when he came back to the house I gave him a ride after I was ready to leave for the office. I packed breakfast and Ben made me a great lunch (to speed me up 🙂 )
When I got to the office I bought a mug of coffee at the caf and had breakfast as I was going through my office emails and preparing my schedule for the day. Breakfast was lovely:
Stoneyfield yogurt, raspberries, PB2, a sprinkle of granola, and a teaspoon of ground flax. At 11 o’clock I decided to snack on a peach. I knew I was having a later lunch because I was definitely going out for a walk since it was not raining – and I was so excited! The peach smelled soo wonderful. I never understood why places like Bath & Body Works, etc sold peach scented lotion and body wash… but I’ve really been digging the peach smell lately. But it is more a smell that I want to eat… I do not think I want to smell like a peach. Who knows. But this peach was delish!
I sliced it up into my yogurt bowl:
At noon I went for my walk with four of my colleagues. We walked three miles in 45 minutes. It was wonderful and I was actually hot!!
I really enjoyed my lunch today – thanks Ben! A great turkey wrap with lettuce and the white bean and basil hummus… fantastic! I also had carrot sticks and Annie’s cheddar bunnies.

I had a busy day at work with a few meetings and at the end of the day my colleague and I re-arranged an exhibit after the museum was a little less crowded. The day went by so quickly. I love busy days with lots of meetings and different tasks to accomplish. Many of my days are spent at the computer doing a lot of data entry – so my busy days are a nice change!
I had a snack after work, at around 5:30. A banana with peanut butter, a couple of left over carrot sticks and my daily Adora chocolate.
I was sort of planning my evening around getting to my mom’s house in time to register for the Healthy Living Summit which is being held in Boston in August. I drove to Rhode Island tonight because of a doctor’s appointment in the morning at 8 o’clock. (Bright and early!) I left our house at 6:30 and a few minutes into the drive I realized that I forgot my RI house keys. Ugh. My mom was out at a friend’s for dinner, and I had no idea when she would be home. I called my mom, and she invited me to join our friends for dinner. Here is what I had:
Tabouli:
My plate contained tabouli with parsley, lemon juice, tomato, a pinch of salt, pepper, and olive oil. I also had grilled onions, and wild rice with sesame dressing, currents and pecans. Everything was amazing! Everyone else had already had hamburgers, I opted to eat the side dishes and then I enjoyed a slice of my mom’s most amazing blueberry pie (an old recipe from Southern Living – I just love the classic recipes!)
The pie really hit the spot. I cannot remember the last time I really induldged in pie.
Wow, this was sort of a lot of food today – but thankfully there were also a lot of fruits and veggies in the mix! I hope you all had a great day. I will be back tomorrow to review Friday’s info. I really hope to go for a run when I get home from work.
