Breakfast · Dinner · Lunch · Walk

Hi All –

Wow, I don’t know about you guys – but Thursday was a struggle for me at work! I was tired, it was beautiful outside and I really wanted to not be sitting at my desk most of the day!  But I survived and had a very productive day at work. But one of the problems was that I was hungry most of the day, and that is always seriously annoying to me.

I thought I got off to a good start – breakfast was a Stoneyfield yogurt (lemon flavor) with blueberry muesli and a 1/2 tablespoon of ground flax.

My muesli is from Trader Joe’s and has a great combo of rolled barley flakes, rye flakes, corn flakes, dried brown rice puffs, barley malt and blueberries. The combo tasted very good and kept me going until about 11 o’clock – which is something considering I had breakfast before 8 o’clock this morning.

Thankfully I had to postpone my lunch walk today due to meetings, etc. I was able to break into my lunch right at 12 o’clock – and I could not have made it much longer.

For lunch today I brought a spinach salad with cucumbers, croutons and a tablespoon of garlic balsamic dressing and more quinoa with red pepper and tomato.

Everything was very yummy!

Even though both of these dishes were very good, I was still hungry after lunch. I think it was a lack of protein that was really effecting me.  Quinoa usually has about 5 grams of protein per serving.  After a while I had a small handful of almonds which helped with some of the hunger.

When I have afternoons or mornings or entire days of hunger there are usually just a handful of reasons. 1. I am tired (which I was today) 2. I am bored (which I was not) 3. I don’t have enough protein in my meal (which was also probably the case today). So two out of three is a deadly combo when it comes to Heather and Hunger.

So, in hopes to not be starving all day tomorrow – I am going to bed early tonight and trying to plan a meal with more protein!

In the afternoon I had my Adora disk and continued to eat grapes… Here are the grapes after they were half eaten:

I got home a few minutes after five and I was still starving. I quickly made a whole wheat wrap with a bit of low fat cheese, spinach and salsa. (Yay for protein from cheese and the wrap!) I ate the wrap outside while catching up with my mom.

After I finished the wrap and a glass of water, I got ready for our evening walk. We walked for 45 minutes and it was a really nice evening outside.  It was my second nice walk of the day. Today I covered about five miles total. After our post-work walk, mom and I headed over to Whole Foods to pick something light up for dinner. I was not very hungry while we were walking around… this was  very strange for me – because Whole Foods can make me hungry anytime. So weird. I left the food choices up to mom and she made great decisions!

Mom chose a chicken breast grilled with a balsamic vinegar and a wonderful succotash with corn, edamame,  roasted red peppers, and dried cranberries! I love how colorful the succotash looks. I also diced up some cucumbers… random, I know.  Dinner was good and the little bit of chicken (probably half a serving or less actually) helped me get some more protein for the day. My hunger is gone now!

This has been a long week for me. I hope you all have a great Friday!

  1. I adored the succotash – saw a recipe recently which made me want to experience this colorful dish! So much simpler to sample Whole Foods’ rendition!
