Hi all!
I didn’t get to the blog last night… but here is a quick recap! On Wednesday I got to work early, which is the new norm. I was sitting at my desk by 7:45! For “breakfast” I had half a lemon Luna bar (left over from Monday’s breakfast!) at around 8:30. At 11 o’clock I had a small handful of almonds (about 6 or so). At noon I went for a disgusting walk…. as in it was actually 97% humidity and the temperature was in the 90s. It was gross. But I’m glad I got a chance to walk and get outside. My two colleagues and I went two miles. I am surprised we survived for half an hour!
For lunch I had some left over quinoa, the night before I diced up tomato and red pepper to add into it. This added some nice texture and flavor to the dish. It was great leftover!
I love the color that the veggies added to the quinoa!
I also had a piece of whole wheat bread with a tablespoon of almond butter and a plum for lunch:
I feel like this was a pretty good combo for lunch. I had a few foods from different food groups – veggies, fruit, whole grains, and healthy fats / protein (almond butter).
As an afternoon snack I had a few grapes. I was hungry, but I was able to not snack too much in the PM hours of work because I knew I was going to have a fantastic dinner! After work I did some errands around Coolidge Corner and then met my friend Jennifer for dinner at Zaftigs… aka heaven!! A few hours before I even got to Zaftig’s I knew what I was going to order – The Rachel which is like a turkey reuben sandwich. It is so good! It is a smoked turkey sandwich on grilled pumpernickel bread with melted Swiss cheese, sauerkraut and Russian dressing (which I ordered on the side). I hardly ever order fries when they are a side option – but last night I did, and they were soo good!
Jennifer and I were in a deep conversation about our lives when the sandwiches arrived – and I just started eating and totally forgot to snap a picture of my meal!! 😦 Gah. Sometimes you just forget, I guess!
Dinner was fantastic and it was so great to catch up with one of my best friends. We had a great night of good eats, and good conversation – there is nothing better!
