Hey All –
Wow, today is Hump Day – thank goodness. This has been a super long week for me, and I’m not 100% sure why except that I still haven’t been sleeping all that well.
Thankfully I heard my alarm and after snoozing twice, I was finally able to get up and start my day. I was at work by 7:40 this morning – a lot better than Tuesday!
Breakfast was a Stoneyfield low fat yogurt (six ounces) with granola, fresh blueberries (amazing!!! from the farmers market on Saturday!) and a teaspoon of ground flax:
This breakfast was sooo good. I was thinking of taking a piece of Arnold’s double protein bread with some almond butter – but I’m glad that I didn’t pack it because it was not needed.
The morning went by quickly with a lot of busy work. Before I knew it lunch time had arrived – it was 12:30 and it was our staff cook out today! Yesterday the weather report was for sunshine and blue sky. However, we woke up to gray skies, fog and drizzle. We had the picnic anyway. I left my camera inside since it was nearly raining!
I had a cheese burger (and ate the whole thing, I can’t believe it – and it was so good!) with lettuce, tomato and red onion.

My plate also had potato salad, corn and black bean salad, chick pea and onion salad, and chips. I love potato chips, and I so rarely eat them I definitely enjoyed my handful of potato chips! After the picnic lunch we had a ton of dessert available. I had a peanut butter and chocolate brownie which was amazing and a mini-cup cake which was good, but probably not worth it.
I spent the rest of the afternoon feeling very full and a little sick to my stomach. My body is definitely not used to eating so much at one time – oops! But it was all so good and a lot of fun to hang out with my colleagues, but I wish we had a better day weather wise.
After work I went looking around for cookware… I ended up getting a great deal on a 4 1/2 quart French oven by Le Creuset in the kiwi color. I am very excited to make some of my new recipes in it… but I think most of them will have to wait until Fall – more in season for stews and so on 🙂
I must say that am not planning an elaborate dinner by any means – perhaps a peach? It’s 8:30 in the evening, and I am still not very hungry!
I hope you are all having a good week. I’m going to get back on track with my eating tomorrow – but I might not be able to post until Friday because of a long day scheduled for tomorrow.
