Hey everyone – happy Labor Day weekend!
I thought I’d take a moment to recap some of this week’s food. It was very cool in the morning this week, and it got me in the mood for hot oatmeal! SInce I have zero time in the morning before I leave for work, I opted for Quaker’s instant weight control oatmeal. I like this stuff because they have a lot of fiber and protein.
I was surprised how this fairly small bowl of oatmeal could get me through the morning this week! On Wednesday I was starving by 11:15 and knew I did not have enough energy to take our noon time walk and have lunch at 1 o’clock. Thankfully Katherine reminded me that we had a stash of Trader Joe’s peanut butter pretzels in her office. I had eight pretzel bits and I was totally re-charged for our walk and was able to have lunch at my desk later that afternoon.
Lunch was an awesome egg salad sandwich on an Arnold sandwich thin with lettuce and home grown tomatoes from my friend Nancy’s garden. Seriously good stuff! We made the egg salad without using mayonnaise, too!
Tuesday was a weird eating day. For breakfast I had half a multigrain bagel from D&D. It was very good, and I was pleased that I had only half of it (mental note – I need to purchase some english muffins soon!)
Lunch was a bowl of udon noodles with extra veggies that I added – broccoli, tomato and green beans. It really added some nice bulk to the noodles. It was a really good lunch!
I had dinner on Tuesday night on the late side, at around 8:30 in the evening. I spent my time after work at the hospital visiting Henri, Nicole and Tim! Dinner was good though – a walnut and carrot salad, whole wheat crackers, a wedge of Laughing cow cheese and a couple of slices of pepperoni. I loved this dinner!
Today was my day to bring food over to Nicole and Tim. I woke up late, and got cooking this afternoon. I made a quiche – here it is in the oven still baking:
I love the smell quiche has as it is baking in the oven… but I’m pretty sure it is mostly the pie crust that I smell 🙂
Here is the little bowl of mac & cheese I had this afternoon in between my cooking:
I had this at 1 o’clock. I got to Tim and Nicole’s a little after 4 o’clock this afternoon where I snacked on trail mix (peanuts, prunes and raisins – a great afternoon snack!)
I’m now trying to figure out what to have for dinner. I am tempted to have more whole wheat mac and cheese or possibly an omelet. Hmm… what to do?
