When I was driving home on Friday night I was really inspired to cook a meal for myself. . . but as you might recall, I was also exhausted from a long week at work and my never ending week of commuting… 😦
Instead of cooking on Friday night, I opted for a relaxing bath and an easy dinner (mom brought left overs home!) But I had already gone to the market and bought my ingredients, so I decided to make dinner for Mark on Saturday night.
Mark often makes me dinner, so I was really happy to finally have the time and energy to make him something. I was inspired by Tina’s post last week of a Real Simple recipe. While I did not follow it exactly, it was definitely the baseline for my new dish!
The Real Simple recipe was for pasta, brie, mushrooms and arugula. The market I went to was sort of pedestrian and did not have arugula that day (which, I won’t lie, made me pretty mad at the time). I settled on a bag of spinach instead. I definitely made a few other changes. Instead of brie, I just used some freshly grated parmesan at the end of the preparation.

I used pasta, bacon (cut into one inch pieces, cooked until crispy before I started everything else) 16 ounces (or so?) of sliced mushrooms, two cloves of garlic (diced), 1/2 a cup of chicken broth (sodium free) 1/2 a cup of white wine, 1/2 a medium red onion and I think that’s about it.

It was pretty good – and very filling!
