Sunday Night – Blueberry Pie

Hi All –

Sunday night mom, Mark and I all met up for an evening of dinner, pie and games! I was supposed to make dinner – but I had a super lazy Sunday and cooking anything was sort of out of my realm of possibility at least for me… But sometimes everyone needs a super lazy day. It was rainy and cold most of the day, so I did not feel too badly for staying in my pjs until 4 o’clock in the afternoon! 🙂

So, for dinner I ordered a pizza! I got totally soaked parking and going in to fetch our dinner, but it was well worth it. While the pizza was good, the real star of the evening was Mom’s blueberry pie! This blueberry pie is amazing – it is from a really old recipe from Southern Living. The recipe is typed out below 🙂

Here is the recipe!

Fresh Blueberry Cream Pie (warning – this is not modified to be ‘healthy’! It is just plain good!)

1 cup sour cream

2 tablespoons of all purpose flour

3/4 cup sugar

1 teaspoon of vanilla

1/4 teaspoon salt

1 egg, beaten

2 1/2 cup fresh blueberries (we did not have quite that much last night – so usually there are a few more blueberries!)

1 9 inch pastry shell

3 tablespoons all purpose flour

1 1/2 tablespoon butter

3 tablespoons chopped pecans

Combine first six ingredients; beat 5 minutes, medium speed or until smooth. Fold in the blueberries. Pour filling into pastry shell. Bake at 400 degrees for 25 minutes. Remove from oven. Combine remaining ingredients stirring well, sprinkle on top of pie. Bake 10 additional minutes. Chill before serving.

I love this pie!

  1. That pie looks DELICIOUS! I’m really considering making it to bring to my family Christmas. They tend to act a little funny when someone introduces something new, but that would just equal more for me!
