Hi Everyone:
I just wanted to show you what my shrimp and couscous looked like from Thursday night!
Close up:
It was a wonderful dinner. I think next time I make it I will include a bead of sauteed spinach and garlic.
I have had a productive Sunday so far. I hung out with my mom, sister and Mark in the morning. Then I got my winter running gear on, and headed out the door for a run around the East Side of Providence. Today I ran 2.83 miles. I am really excited about this, because when I was moving, I was always running. A lot of times when I run I take “walking breaks” but today I was running or jogging the entire way. My knees were hurting because most of the run had to be on the sidewalk because the path down the Boulevard was really mudding from all of the snow melting this week.
After my run I went over to Seven Stars, my favorite bakery. A couple of days ago I had paid a visit to the bakery and I was torn between a ginger biscuit and a chocolate croissant. What a choice!! Usually the savory wins over the sweet for me, and I ended up with a fantastic ginger biscuit. But over the last few days I could not stop thinking about the chocolate croissant. I think my body really wanted it. So, this afternoon after the run I went in, hoping against all odds that they might still have one. They did not. It was sort of a let down, but there is always next weekend! I was a little sad to not get my treat, but instead I went home and toasted up a piece of sour dough bread with a sprinkle of cheddar cheese on top. It hit the spot!
Tonight I am in charge of dinner. I am really excited for what I have planned. I have already prepared some homemade pesto and I am going to cook some fresh linguini, cut up some grilled chicken sausage and cherry tomatoes and toss the pasta and pesto with everything. I hope it will be good! I am thinking of making bread pudding for dessert.
I will be back to let you know how everything turns out.
Hope you are all having a great weekend!
