Hey All –
Wednesday was another successful day in the structured meal plan. Breakfast was the same, because I loved it so much:
Soooo good! I had my morning snack of 1/2 a cup of Greek yogurt and 1/4 cup of fresh strawberries diced up. I had the snack at 11:15 and went for a half hour walk at 12pm. I finally ate lunch at my desk at 1 o’clock. It was a great mixed green salad with veggies and a hard boiled egg:
The veggies, greens and a sprinkle of chopped almonds:
With the chopped hard boiled egg, and a tablespoon of dressing:
This salad was amazing. At 1:30 there were two office birthdays to celebrate. Instead of a chocolate cake and ice cream, which is our usual cuisine at these festivities, one of my colleagues was brilliant. She decided to bring in the makings of strawberry shortcakes! I was going to pass on dessert (especially since I had just eaten my salad), but I decided to enjoy instead 🙂
At around 2:30 I had a small cup of coffee and milk. This was an important snack because it really helped me get to the gym! On my way home, I snacked on a gala apple. I walked into the gym at 5:30 – ran a quick mile, with one minute warm up, one minute cool down for a total of 12 minutes on the treadmill. I did weight training for 25 minutes and elliptical for 22 minutes at the end to wrap things up. It was quite a good workout!
For dinner last night, I made a tofu and veggie stir fry with brown rice. I measured out dinner (one cup of tofu and veggies which were together in the wok, and 1/2 a cup of brown rice). Dinner was really satisfying:
A while after dinner I popped some 94% fat free popcorn which I shared with my mom as we watched Parenthood (TiVoed – I really like this show!) and Modern Family. I was getting ready for bed by 10 o’clock – which is super early for me. But I have found that by getting up early (around 5:45 this week) I am able to fall asleep before 11 in the evening.
Anyhow, that is a recap of Wednesday. I hope y’all had a great Hump Day, too 🙂
