What To Eat When It’s 102 Degrees Out…

Hey All –

Happy Tuesday evening. Did everyone survive the heat today?? I was actually thrilled to be at work today in the air conditioning 🙂 On my drive home tonight I was trying to come up with a good idea for dinner. I knew I needed protein, but I didn’t want anything too heavy or hot. I just came up with something in my head… here is what it turned out to be:

Ingredients…

Garlic

Tomato

Red Onion

Basil

Cannellini beans

Olive oil

Chicken sausage

Barilla Plus Pasta

The prep work:

I cooked chopped up the chicken sausage, cooked it and then set it aside in a bowl to let it cool:

Chopped up two cloves of garlic and red onion (double the amount shown on the cutting board)

Mixed the garlic, red onion, tomato with about two tablespoons of EVOO and a small pinch of salt (while I thought it would be important to add a small flavor of salt, I figured the beans and sausage would have sodium in them that would also add to the flavor of the dish)

The basil was straight out of my garden 🙂

I washed and drained the beans (to remove some of the sodium, if possible)

Garnished with some Parmigiano-Reggiano. I ate the meal cold. It was refreshing. I am thinking that the flavors might be even better tomorrow, I’ll let you know!

PS: I’m totally having a little bit of ice cream later tonight 🙂 What is summer for if you don’t enjoy ice cream once in a while?
