Ratatouille via Pepin

Hi readers –

Have you ever had one of those nights where the entire evening just gets away from you? Wow, that totally happened to me last night. I ran a couple of errands on my way home from work, sat out on the deck and talked with Mark about our days, and before I knew it – it was 8:30 and we had not even started making dinner yet!

This is yet one more reason why I like love Jacques Pepin’s recipe for ratatouille. It is simply amazing.  We got such a late start in prepping dinner, I am sorry to say that I did not photograph – at all. Not the prep work, not the cooking and not the eating. Ugh.

But here is what I had for lunch today:

Superb. Chunky eggplant, squash, pepper, garlic, tomato over whole wheat pasta. So fresh and summery!!  This is one dish you can eat all year round. 🙂
