I ended up having a simple piece of whole wheat toast for breakfast. I topped it with a bit of Teddie peanut butter and a smear of strawberry jam. It was wonderful, but not over all compelling. Lunch however, was a different story:
Yesterday my mom and sister went to the beach in Southern Rhode Island. They came across a farm stand during their day, and thankfully picked up some tomatoes, scallions and Rhode Island native sweet corn. I used two of the three ingredients in my lunch today. There is nothing like native tomatoes, let me tell you.
I sprinkled some cheddar cheese on a tortilla and toasted it in the toaster oven. Sliced up some tomato and scallion and topped the tortilla with it.
Simple and fresh. At the last minute I decided to add some spinach to give it a little more bulk and crunch…
It was a seriously awesome sandwich. I could easily eat another, but I opted not to. I’m off to run some errands. See you in a bit!
