Turkey Chili

Hi everyone:

It is sort of like fall out there tonight… except for the weird fog and humidity. Well, the cool and drizzly weather got me in the mood for some turkey chili! I had to run a few errands on my way home from work (including the grocery store) so I got into the kitchen on the later side today.

Here are the things I picked up from the market:

I love how easy turkey chili is. I heated a tablespoon of oil in my skillet. Then I started cooking the 1 pound of turkey while I started chopping up the onion…

I added canned tomatoes, water, then I drained the beans and rinsed them, added them into the skillet along with two cloves of smashed and minced garlic, and a lot of spices. (Chili powder, cumin, coriander, oregano, paprika, and I think that is about it.)

It all came together in this bowl:

The scallions for garnish really made it! There was also a spoonful of sour cream and a sprinkle of Monterey Jack cheese 🙂

A note about bringing your meals to work with you: So, today I did not have any food with me at work. I spent the night with one of my very good friends, and I had no food planned for Monday. For breakfast I went to Dunkin’ Donuts where I purchased a medium coffee with milk and no sugar and a bagel egg and cheese sandwich, $4.50. For lunch I had a medium soup and a breadstick from ABP… $5.50. A grand total of $10 spent on breakfast and lunch today. That would not fly on a budget!!
