Hi All –
Today was one of those long days, but it was also a really fast day at work. I didn’t get home until a few minutes after 7 o’clock because I stayed late, and took the train home. I love taking the train. I wish I could do it every day! If only it could get me home a little earlier…
I ran to the market after getting off the train, I was in and out in ten minutes – I was impressed with my efficiency! It continued in my preparation for dinner. I made ramen. But not the ramen you used to have during college. Noodles with tons of fresh vegetables, and a fried egg on top. There is nothing like it when you do not have a ton of time and want something fun, fresh and relatively healthy!
Dinner:
Soooooooo. Gooooood.
What are the ingredients, you are probably wondering. Broccoli, corn, carrots, mushrooms, scallions, noodles, and an egg. A splash of hot sauce, light soy, rice wine vinegar… lots of good stuff. It was a really big plate – I love how the vegetables bulk up the noodles.
I had a small piece of left over birthday cake from my mom’s birthday party that was over the weekend. Yum.
