When I am home alone on Fridays, I tend to bake something. This past Friday I decided to make homemade oatmeal cookies with raisins, dried cranberry and dark chocolate chips.
My original recipe makes 4 dozen cookies. Who needs that many!? I unless I am baking for a crowd, I usually ‘half’ my recipes these days. It can be a little tricky to get the dough the correct consistency, but I am slowing getting the hang of it!
This time around I added just a little bit of extra flour once I had all of the ingredients together. The dough turned out pretty well. Here are the cookies before they went into the oven:
I loved the idea of dried cranberries in the cookies:
It really gave the cookies a great flavor. I will definitely be trying this addition to the cookies again.

I tasted half of a cookie before I packed them up. On Saturday my mom went to visit some of our family friends. I sent her with a lot of homemade oatmeal cookies!
