… sort of.
My facebook status says it all, “recovery is hard work.” It is not that much fun. But I guess I am making progress, yesterday I felt horrible and today I feel a bit better 🙂
Last night I ‘sort of’ made dinner. I love Annie’s Deluxe Mac & Cheese (the aged cheddar kind!). Yes, it is out of a box. But it is organic, there are no trans fats, and there are 12 grams of protein per serving. I think when you are sick or not 100% yourself, you can grab a box of Annie’s mac & cheese and be ok with it.
One of the things I love to do with macaroni and cheese is add vegetables to the mixture to bulk it up and make it healthier. I was lucky to find frozen broccoli in the freezer and I had a quarter of an onion on the counter. I sauteed the onion and steamed the broccoli. I added paprika, cumin and coriander to the mix. I could not find a head of garlic or grape tomatoes in the kitchen, so I omitted them – but I recommend both for anyone adding ingredients to mac & cheese.
Here is what I had for dinner last night:
macaroni, cheese and broccoli topped with panko bread crumbs and freshly ground black pepper. It was super good. There is a lot left over, so I will be having it again at some point today. Lunch was a piece of bread with hummus and spinach. Yum.
