I am pretty sure I had a significant lack of protein in my diet yesterday. I was not hungry most of the day and the first thing I ate was a piece of Arnold’s sandwich thin, a bit of spinach and a spread of hummus (breakfast?). Later I had apple slices with a tablespoon of peanut butter (lunch?). My ‘afternoon snack’ was a few baked potato chips and a tablespoon of sour cream and onion dip – a snack I had been craving for days. Dinner was a salad of spinach, grape tomato, and avocado and a serving of Annie’s mac & cheese with the broccoli and tomato. I could have had about three more servings of the mac & cheese – but I settled for a small serving of low fat ice cream a couple of hours after instead 🙂
I did not have a lot of protein in my diet yesterday – which I think lead to my hunger last night. So today when I got up, I planned out a breakfast that would be higher in protein and here is what I came up with:
An egg / egg white omelet with tomato, spinach, avocado and a sprinkle of low fat cheddar cheese. I loved this breakfast. I enjoyed it along with half a bagel, which I did not quite finish. I also had a small juice glass of orange juice. Yum! I felt like I was having such a perfect breakfast – I think this omelet tasted better than one I would get in a diner. I loved having all of the fresh ingredients incorporated into it, too.
I definitely hope this ‘higher’ in protein breakfast will help me get through the day without being quite as hungry as I was last night.
