Pancake Recipe

Happy Sunday morning, everyone! I had every intention on making oatmeal for breakfast this morning. But I have been craving pancakes for a while, so I decided to go ahead and make some pancakes!

I am working on a new pancake recipe… I’m going to share what I have so far, but keep in mind I might come out with a few changes in the future 🙂

Ingredients:

3/4 C whole wheat flour

3/4 C All purpose flour

1 Tablespoon baking soda

1 egg

2 T butter, melted

1 1/4 C milk (preferably not fat free – I went with 1% milk today)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon (or to taste)

1 teaspoon agave (you can use sugar or honey if you don’t have agave)

Directions:

Sift together dry ingredients into a medium size bowl. Make a well in the center of the dry ingredients and add the egg, butter, milk, agave and vanilla. Mix all ingredients together until mixture is smooth. Cook pancakes as you normally would. I use 1/4 measuring cup to top measure out my pancake mix. I use a bit less than a full cup. These pancakes are pretty substantial!

We topped our pancakes with a little bit of warmed up maple syrup from Trader Joe’s. I am a firm believer on maple syrup or bust. If I am going to have something so sugary – I am only going to have the real thing. It is just so good!!

Ok, folks. I have a non-busy day ahead of me. But I am going to do some laundry, figure out some stuff in the blog world (hopefully) and do some reading. It is snowing here at the moment, so I do not think it is a good day to go for a walk outside. On March 1st I will be starting back at the gym. I’m looking forward to it, because even though I cannot lift weights, run or do much of anything, I can at least go walking on the treadmill – even if it is snowing outside!
