Wow did those pancakes hold me over! I had two and a half “medium” sized pancakes. At two o’clock I went out for errands. Market and I picked up a tart pan for myself. What can I say? I think I might be making a tart or something in the near future.
If anyone knows where I can pick up an individual sized tart pan, please let me know. I’m looking for 3 1/2 inches or so. Thank you in advance!
Before I started my errands, I had a couple of pieces of pineapple. Pineapple Is So Good. I am having some for dessert tonight, I have decided. I also packed a small handful of peanut butter pretzels (from Trader Joe’s) to take with me on the road. I often get hungry while I am running errands – and I refuse to spend money on food (fast food being the worst) when I have lovely, healthy, fresh food at home. So I just needed to make sure that I got home without picking up a hamburger or something while I was out 🙂 When you know you have a weakness, you have to help yourself not give in.
For the record, I had lunch at 4 o’clock today. I guess I am prepping for a dinner during the Oscars tonight or something? We shall see!
A few of my readers have asked about cooking for one. Today’s lunch got me thinking about what you eat when you are on your own. I also started reading the book Alone in the Kitchen With an Eggplant: Confessions of Cooking for One and Dining Alone. It is a collection of essays. I have really enjoyed it so far. If you eat on your own, live on your own I highly recommend this book!
When I eat on my own, I tend to eat a lot of salads. You can pick up a few vegetables at the beginning of the week and get through the week with them. Today I picked up carrots and tomatoes. I already had mixed greens and an avocado that I had to save. I highly recommend adding protein to your salad – a hard boiled egg, some tuna or salmon, grilled chicken or some deli turkey. Here is what I created (I did not have protein on hand today… I will make up for it with some yogurt later…):
Mixed greens with tomatoes, carrots, avocado, and a few chopped almonds. Dressed with a teaspoon of balsamic vinegar. Two little pieces of baguette with melted cheddar cheese. I also heated up a bit of my potato and leek gratin.
