Homemade Granola Bars

I have a road trip coming up this weekend with my mom and sister… so I decided to make a batch of the oh so popular homemade granola bars. Now that I have made them a couple of times I can crank these out in no time. They are so much better than anything you can buy at the grocery store.

I melted the peanut butter and honey together (I’m out of almond butter – can you believe it?)

Eventually it melted and combined:

I gathered all of the ingredients together:

There is a lot of chopping involved in making these babies:

I chopped almonds, dried apricots, cranberries, raisins, and a few semi-sweet chocolate chips. Let me tell you, chopping cranberries and raisins is not the easiest thing in the world 🙂

The end result looked quite good:

Yum…. my sister has not tried these granola bars, so I made them especially for her.

Breakfast was a bit of a challenge because I am not feeling all that great today. Eventually I made myself eat half a cup of yogurt with some brown rice cereal and a sprinkle of cinnamon. It hit the spot…

Cinnamon is a great way to spice up yogurt. The brown rice cereal gives it a low key crunch, too. Quite a good combo. I have to go get ready for lunch. See you in a bit.

  1. Hey Heather,
    Do you have a recipe for the Granola? I see some ingredients, but is there a basic thing you use for it? The end result looks good, and I’d like to try it out…
    Also, I’m thinking a Cuisinart would make those almonds into a manageable size in no-time, n’est-ce pas?

    and Finally, when are you and your IT buddy going to pull out all your recipe’s from their original nesting on your posts into a separate tab at the top? I think that should be a project for this summer. 🙂

      It is a Mark Bittman recipe and it truly is wonderful. My mom claims she can’t eat store bought granola bars any longer. Yesterday I added cranberries, raisins, and a few semi-sweet dark chocolate chips, and I kept all of Bittman’s original ingredients except I forgot the salt.

      Yes – I will be working on pulling all of my recipes together and having a recipe page soon! Hopefully before the summer 🙂 Stay tuned. Thanks for reading!
