Breakfast

Oatmeal

So, I am totally back on board with oatmeal. I just made the most fantastic bowl for breakfast and I am here to share it with y’all.

In the mix today:

1/3 cup rolled oats

1/3 1% (that’s right!) milk

1/3 water

2 shakes of cinnamon

small palmful of raisins

tiny splash of vanilla

The oats, milk, water, cinnamon went into the pan first:

All stirred up:

Once the mixture was stirred together and on medium heat, I added the raisins. They are so much better when you add them in towards the beginning of your oatmeal creation. They get softer as they cook. I tend to add vanilla in the middle of the cooking process because I don’t want all of the flavor to cook away…

After the oatmeal started bubbling, I stirred constantly for a minute or two. Then I emptied the pan out into my favorite bowl. I added a smidge of brown sugar (why not?), a small spoon of peanut butter and a sprinkle of granola to get some super foods (flax seeds and pumpkin seeds) mixed in.

The more water you drink when you eat oatmeal, the longer the oats will stay with you. So I accompanied my oatmeal with a nice tall glass of water.

So it is officially spring – but the weather forecast has snow in it for tomorrow. Hmm… at least I have flowers in my kitchen from my own backyard!! The forsythia in my backyard has buds on it – so my mom clipped two little branches and brought them inside, and placed them in a cream pitcher 🙂 They started blooming yesterday! I love them…

Happy Spring, everyone!
