Dinner · Lunch · Running


I have to be honest with you, I do not love Sunday evenings. I always find myself worrying about work, getting up early on Monday morning, and the long week that stretches ahead. I hate it.

But tonight I am not letting it get to me. I had a productive Sunday. I got a decent run in on the treadmill. I did a total of 3.7 miles. 3.1 I timed as a 5k, and I averaged a 12 minute mile. Not bad for being side tracked from running for the last four months! Then I walked .6 miles as a cool down. The 5K time was a mix between running and walking.

After I got home I drank a protein shake, the mix consisted of 1% milk, water, and protein powder. Then I showered (hot water good for my muscles, I think) threw in some laundry and then started to think about lunch at 3:30 in the afternoon. I had left overs from my awesome dinner at Ama’s last night, so I definitely wanted to eat them. I sauteed some spinach and mushrooms to bulk up the noodles a bit. The end result was amazing.


I loved this lunch! I ate my noodles with chop sticks. I have to tell you, I love eating with chop sticks because it slows my eating down. Sometimes after a run, I am extremely hungry and I have to tell myself to eat slowly. My beautiful chop sticks are like an automatic slow down – much appreciated.

For dinner tonight I made a quick thin crust pizza. On Friday I had picked up the pizza shells from East Side Market. These crusts are really great because they are whole wheat, thin and they are from Olga’s which is one of my favorite places in Providence.

On the pizza I put some ‘no salt added’ tomato sauce, reduced fat mozzarella cheese, red peppers and sauteed mushrooms (left over from lunch). The end result was fabulous. I must say that I could eat an entire pizza 🙂


Yum. I will be having a slice of pizza and a salad for lunch tomorrow – I am already looking forward to it!
