I often get questions about preparing dinners for one. Tonight I had a dinner for one so I just figured I would tell you about it.
You might recall that my mom made chicken last night. She did not roast a whole chicken. She bought two chicken breasts (chicken on the bone – it has so much more flavor than a boneless chicken breast!) We did not even finish one chicken breast last night – so there was plenty of left overs. When I used to cook for myself a lot, I would always pick up one chicken breast from my local butcher or from Whole Foods and it would last me three or four meals.
Tonight I paired the chicken up with some broccoli. When you are cooking for yourself a lot, you might want to look into have some frozen veggies around. I love frozen broccoli. (Weird?) I also love frozen cauliflower, peas, and so on. (On a side note, I also like frozen berries for smoothies.) I also had a couple of slices of a baguette, and a glass of cabernet sauvignon.
Not too bad for a girl on her own, right?
I seasoned the broccoli and chicken with garlic powder (I hate to admit it, but that is what happened in the kitchen) and freshly ground pepper. It was all quite good.
