Hello blog world! How is your week going so far? I cannot believe it is Tuesday night already and this is my first post of the week. Crazy.
I have switched up my eating habits a bit this week – not by choice really, but by lack of going to the grocery store! I usually shop on Sundays, and this Sunday a trip to the market was just not in the cards.
I was pretty amazed that I got through two breakfasts and lunches this week without one of my weekly trips to the store. This week I have been eating a mini Clif bar for breakfast, along with a cup of coffee with skim milk and a 1/2 cup of a low fat blueberry kefir drink which I have been loving. (I tend to have the kefir at 6:30 or so – right before leaving the house and the mini Clif bar at some point in the morning, after arriving at work)
So far this week my lunch has been a hodgepodge of goodness. 🙂
I definitely have to pack these the night before, because there are a lot of components – but they all work so well together. It seems like a lot of food when I am eating it -but it is all so healthy and natural, I’m loving it.
On Monday my lunch was:
small container of Stonyfield low fat blueberry yogurt, 1/4 cup Kashi go lean crunch along with chia and flax seeds dumped into the yogurt.
Orange pepper slices
Hummus (which I ate with the peppers)
1 small whole wheat pita pocket with all natural peanut butter from the local farmer’s market and raspberry
I cannot remember the last time I have switched up my lunch so dramatically! It has been fun. Today lunch was basically the same (so much for switching it up!) but since I ran out of peppers, I had a bunch of carrot slices. These lunches really make me feel like I am back in high school.
On Monday my exercise was a 2 mile post work walk. It was sort of foggy and drizzly, but still a nice bit of time to get out and about. Today my exercise was a 3.2 mile run which I accomplished in 33 minutes. I wish my time would start improving – but I guess I am ok with it. I just love the fact that I can walk, jog and sometimes run. Today it was about 70 degrees this evening when I went running and I loved every moment of it – and usually I hate running if it is warmer than 65 degrees. I embraced the heat today. (Sure, for most people 70 degrees is not all that warm… but it is for me – I do not function well in the summer time)
For dinner tonight I had chicken pad thai with extra steamed vegetables (upon my request). I have started asking my favorite Thai restaurant for extra vegetables when I order some of the menu items that typically do not come with a ton of veg. They are always so happy to up the ante – and they do not even charge me extra. It is so cool – I am so glad that I started asking!
