The day after a race can be so weird sometimes. I woke up this morning and I felt like I did not have a goal for the first time in a while. But I laced up my new running shoes and hit the road for a really quick, easy two mile run. I actually ran down to the course for the Providence half marathon and cheered for the runners for a while. It was really fun to cheer for other runners today – but one day I hope to be running this half marathon. I love the fact that I know the whole course already!
Later this morning two of my great friends came to visit me – my friends Rebecca and Sarah. They both drove for a long time to have lunch with me, and I had so much fun catching up with them. We went to one of my favorite places, Red Stripe.
Brunch was on the menu on this Sunday afternoon. We got to the restaurant a few minutes after 12. Today I ordered the Red Stripe Eggs Benne, two poached eggs over one piece of grilled Italian bread, with prosciutto, oven roasted tomatoes, and herbed hollandaise sauce (which I ordered on the side). I started eating before I remembered to snap a quick photo – so pardon the appearance, but here it is:
Potatoes and red peppers are on the side. The meal was delicious! Rebecca ordered the Croque Madame, which is another fantastic sandwich off the menu and Sarah ordered the Middle Eastern vegetable wrap. We also enjoyed amazing bloody mary’s with our brunch. Everything was wonderful, especially the company.
After lunch I went out for a walk because the weather was so beautiful, I could not stand to be inside with the sun still out. I walked over three miles. After the walk I did laundry, cleaned my room and prepped for my work week. Eventually I thought about dinner and ended up making Annie’s mac & cheese, because I could not think of anything better to make. Of course I added a lot of vegetables to bulk up the mac & cheese. I love adding spinach, broccoli and tomatoes to this meal. The final product:
Thankfully there will be enough left over for dinner tomorrow night – I love left overs on a Monday night.
