Happy Monday, everyone. I don’t know about you – but my Monday morning was a bit weird today. I stayed up waaaay too late due to President Obama calling a late night press conference on Sunday right as I was getting ready for bed. I knew it was something important – and there was no way I could go to sleep not knowing what it was. [In case you have not figured it out yet (and in the interest of full disclosure) – besides running, cooking and blogging – I am a huge political geek!] I got off to a little bit of a later start than normal, but it all worked out.
I started my morning off with a cup of coffee in my travel mug and drank it while driving to work. At 7 o’clock I started eating my morning breakfast – a banana. I finished it around 7:30. At 10:30 I had a morning snack of a Kashi granola bar.
Lunch today was pretty great:
A spinach salad with red peppers, carrots, scallions and Newman’s Own ginger and soy dressing (about a tablespoon) along with a peanut butter and jam sandwich on an Arnold’s multigrain sandwich thin and a dark chocolate Adora disc for my calcium. Fantastic.
At 3 o’clock I had my yogurt with chia & flax seed and Kashi Go Lean Crunch sprinkled on top. I also had an apple in my lunch bag, but I did not need it. The yogurt, etc. was just enough to get me to the gym after work. I did 40 minutes on the elliptical machine, I made myself take a day off from running in hopes that I would avoid freaking my knee out again!
When I got home I had every intention of having some mac and cheese for dinner, even though I was really hungry and I was not sure if a light dinner would get me through the evening. I was so delighted to find out that my mom went to the market and got a chicken breast (already cooked) and the fixings for chicken wraps. I chopped tomatoes, chicken while mom steamed green beans and sautéed sliced almonds for a side dish. What a treat!
I filled my whole wheat wrap with green leaf lettuce, chicken, tomatoes, light sour cream, guacamole, and salsa. Dinner was fantastic. It was a little on the late side, around 8 o’clock by the time we ate.
I am slightly exhausted and ready to go to bed early tonight. I hope that your week is off to a great start so far. See you tomorrow!
