Back to work…

Well, the mini-vacation has come to an end and it was back to work today for me. Sort of sad.

I have been feeling weird most of the day, not sure what exactly is going on – but it is 11:30 at night and I am fairly wired, and I really need to be sleeping. But I figured I had time for a quick blog post, so here it is.

My alarm went off at 5:30 this morning. It took me a while to get out of bed, and I did not start my morning routine until closer to 6am so basically I was running late. Thankfully I had packed my lunch and prepared my iced coffee the night before, so most of the meal preparation was fairly easy, mostly revolving around my breakfast plan.

I poured my iced coffee into my handy dandy cold travel mug (thanks Jane!), grabbed my packed lunch out of the refrigerator, and as quickly as I could I put together my breakfast sandwich. Normally when I think of a breakfast sandwich, that means an egg and cheese. But today it was a sliced up banana, a tablespoon of peanut butter and a nice drizzle of honey on a toasted sandwich thin. This sandwich was fantastic! Even though I started eating it at 6:30 this morning and probably finished it around 7AM, I did not even think about lunch until sometime after 12 o’clock this afternoon.

My breakfast was not quite as transportable as my morning smoothie is, but still, it worked… sort of. I snapped a quick picture before I started driving this morning:

The iced coffee was a dream in this hot and steamy weather. But the breakfast sandwich was a little on the messy side. When I put the whole thing together the bread was still warm from the toaster oven… you might be able to see where the honey leaked out a bit. Thank goodness I brought a napkin into the car, too.

Do you know what one of the great things about not having a road race in the next couple of days is? The return of my lunch time salad!! This one was a beauty:

On Tuesday night I quickly realized how out of practice I was in the salad department. It took me over a half an hour to make this baby! In the salad mix:

Spinach

Tomato

Carrots

Scallions

Cucumbers

Red and orange peppers

Radish

Sliced almonds

On the side (in three separate small containers):

1 T Annie’s (light) Goddess Dressing

1 small handful of croutons

1 ounce (estimated) of canned tuna

This salad was amazing. I also had a second iced coffee with lunch (a medium from Dunkin’ Donuts – milk, no sugar in the mix) and a dark chocolate Adora calcium disk.

I did not need my mid morning snack, and in the evening on my drive home I enjoyed a few whole wheat crackers that I had packed in case lunch was not enough.

Tonight’s dinner was with family friends. An amazing assortment of grilled goodness. Shrimp, steak, mushrooms, summer squash, onion all on the grill along with a side of lovely fresh broccoli from their vegetable garden. (The summer squash was from the garden as well.) Dessert was strawberry shortcake. What wonderful summer food!
