Sunday Morning…

Last night I set my alarm for 7:30 so that I could get up early, eat something and go for a run. For some reason at 7:30 this morning I decided to give myself a treat – a Sunday morning! I reset the alarm for 8:30 (if I did not set an alarm, I would sleep until 10:30 or later without fail). I eventually got out of bed at 8:45. I gathered all of my laundry, went downstairs and threw the clothes in the wash. I poured myself a glass of iced coffee, and started thinking about breakfast.

On the weekends I never have a morning that I just sit around and enjoy myself. I am always waking up early, eating something easy to digest (small, usually a piece of toast with peanut butter) and I sit around with angst waiting for my body to decide it was ready to hit the road – before the summer heat.

It was difficult for me to justify staying in today (well, I’m not technically staying in because right now I am typing out on my deck enjoying this beautiful weather). But I have been active over the last several days, so I’m just going to be ok with not running today. I will, however, exercise by going to the gym later today.

I decided on French Toast for breakfast today. I love making French Toast when I am on my own, because you can make as much or as little of it as you want. In my mix today I used one egg, about two tablespoons of light vanilla soy milk, a sprinkle of cinnamon and a teaspoon or so of good vanilla extract. It made the perfect mixture. For the bread I used what I had on hand, Arnold’s multi-grain. I also cut up a banana to put on top of the finished product. I looked in the fridge before I got started and found my jar of maple syrup – it had maybe a tablespoon and a half left in it. (I see a trip to Trader Joe’s coming up in my near future…)

I cooked the French toast in butter and a little cooking spray – just enough to coat the pan.

The finished product was amazing and I had just enough batter to make two pieces of french toast! Perfect!

It was quite a nice breakfast and I have enjoyed every moment of my leisurely Sunday morning – it has been so worth it! My half marathon training starts not next weekend, but the Monday after next weekend. So there will be plenty of time to wake up early and get my run on. Stay tuned!
