I took part of Monday morning off from work. The plan was to go for a run, but last night I stayed up way too late watching Downton Abbey and did not get to sleep until after 2 AM. (!?!?!?) So this morning I took it easy. I slept in a little bit, until 8:30 this morning.
I finally dragged my butt out of bed, had a cup of coffee (it didn’t help that much) and thought about breakfast. This morning one of my friends wrote on Facebook that “Mornings like this are made for greasy McDonald’s breakfasts.” I loved that comment and it inspired my breakfast choice, sort of. 🙂
I sautéed mushrooms in butter, then I added spinach and one egg and one egg white and cooked everything for a bit. Then I added some Cabot reduced fat cheddar cheese to the mix. It was pretty great:
I added hot sauce to my plate, and had a little bit of ketchup on the side. I had an Arnold’s sandwich thin on the side, too. The final product:
Well, I’m off to get ready for my day. Tonight I get to attend the Boston Lyric Opera and I am really excited about it. It will be a long day and night, but you cannot let great potential experiences pass you by, right?
