HI everyone:

How is your week going so far? I don’t know about you – but I cannot believe that it is Wednesday already! The week is flying by and I still feel like there are not enough hours in the day to get everything done. Oh well! I’m just sort of going with it right now 🙂 We can only do what we can do, right?

It is feeling like summer these days. It has been hot and humid lately, and last night I felt like it was the middle of July when I was trying to get some sleep last night. Let’s just say that my attempt to sleep was a bit of a failure. Which threw my entire day off. Instead of getting up when I normally do, I slept in late – but it was not quality sleep because I just pressed snooze on my alarm clock for an hour. Ugh. So, I got to work at 9:05 instead of my normal 7:15 this morning.

Breakfast was a lemon zest Luna Bar as I was driving to work. I also had coffee with vanilla soy milk. Both were pretty good.

Last night I downloaded a new, very cool, app for my iPhone. It is called The Eatery and I sort of dig it! Today I snapped a photo of my lunch and people rated how healthy they thought my lunch was…. Here is the photo, and what people thought of it:

Later in the day, I had a weak moment and grabbed a small handful of M&Ms. I snapped a photo and used my Eatery app again…. I got a much different rating for this snack (as expected!).

My scheduled afternoon snack faired a bit better on the app – a 0% Chobani Greek yogurt, raspberry.

The other day I made pasta primevera for dinner. It was pretty great and it looked really pretty. It was a bit of work (I need to get faster when julienne-ing vegetables!) The vegetables included in the meal were: zucchini, summer squash, carrots, tomatoes, onion, garlic, and orange peppers. The pasta was FRESH pasta! Seasoning was a touch of kosher salt and ground black pepper.


I garnished with fresh basil and grated park reg cheese 🙂 It made a good lunch the next day, too! My favorite thing about this meal was how fresh everything tasted. I am excited to make the recipe again – and next time I will document and publish the recipe for you all. I promise.

OK. It is late (it always seems so late….) so I am hitting publish and going to bed. I’m going to try and get a little extra sleep since I did not do so well in that area last night. Have a great day tomorrow, everyone!
