Thursday

Hi Everyone:
Happy Thursday night! I am so happy that tomorrow is Friday – it was really great working just a three day work week! I was able to get to work again at 7 o’clock this morning – I even had time to whip up a smoothie for breakfast.

I forgot to take a photo of the smoothie – but here is what was in it:

Spinach (2 handfuls)

3 strawberries

Small handful of blueberries

A few raspberries (I found the blueberries & raspberries in the fridge and they were on their last legs – they had to be tossed into the smoothie)

1 cup plain 0% fat yogurt

1 scoop protein powder

1 T PB2

Chia seeds

Flax seeds

Water

Ice

This made two smoothies. 🙂 I drank mine on the way to work – from 6:15 finishing it up around 6:45. Normally I have breakfast around 8 or 9 o’clock, so this was a bit early for me. But it kept me full for a while!

At 10:15 this morning I was in need of a snack. I grabbed a Chobani strawberry Greek yogurt:

At 12:30 I took a half hour walk with my friend Rachel. It was simply gorgeous outside – a perfect 10 of a day! It was hard for both of us to go back inside to work – but some how we managed.

I had lunch during a meeting, and my salad was definitely the envy of some of my colleagues:

In the mix today:

Spinach, tomatoes, red peppers, cucumbers, grilled chicken & pistachios. I also used a tablespoon of Newman’s light caesar dressing. The salad really hit the spot. It seemed like a small lunch – but I knew there was a special afternoon treat, so I was ok with having a lighter lunch.

At two o’clock this afternoon we had a cake celebration at work. The cake was ordered by one of my colleagues, and it was beautiful (the flowers were, too)!

I am so sad that my office mate is leaving – but I tried to enjoy the cake in her honor 🙂 It wasn’t too hard to enjoy the cake, it was light, fluffy and tasted great:

After work I did a quick 1 1/2 mile run to keep my Summer Running Streak going… my toes are sort of in pain these days. So after my run I went in to Rhode Runner (the Rhode Island expert running store) to see if I could find a shoe that might fit my feet better for summer running. (Am I the only person who has to deal with feet swelling in the summer? Ugh.) I tried on a couple of running shoes, and eventually settled for a pair that has little more room in the toe box. I’ll write about this more over the weekend once I have a chance to try them out.

After the shoe purchase I drove home and went for a 1.6 mile walk with my mom. It was great to have three small exercise sessions today!

Dinner was late – I didn’t eat until after 8 o’clock. But it was another great salad, this time with salmon:

This salad had all of the same ingredients from this morning the only change was substituting the chicken with the grilled salmon (both from Whole Foods).

OK, I’m off. Anyone have ideas for what I can make for dinner tomorrow night? I’m currently at a loss – hopefully something will inspire me between now and dinner time tomorrow!
