Hello blog readers! How is the beginning of your week going? So far things are falling into place for me – always a good thing.
On Monday morning I had whole grain english muffin with peanut butter for breakfast. It hit the spot – I just love peanut butter on Monday mornings! It makes sort of makes the whole idea of a Monday morning less painful 🙂
I was not a good meal planner this weekend for the work week, so I had to buy lunch at the caf today. Thankfully I lucked out with this wonderful piece of pizza (A Bianca pizza – spinach cheese!) It was delicious and I loved it – and it was even better with the bit of hot sauce that I added.
I made up for having not the healthiest lunch by having a hearty and wonderfully fresh salad for dinner. Mom was my hero last night – she went to the market and picked up vegetables and turkey for salads and had the eggs boiling when I got home. I helped her chop the vegetables and make the salads. They were so good!!
This morning I got back into the swing of things with my smoothies. In the mix today:
2 handfuls of spianch
1/3 cup frozen blueberries
1 banana
1 scoop protein powder
6 ounces of 0% Greek yogurt
Ice (approximately two handfuls)
Water
Sprinkle of chia seeds
Sprinkle of ground flax seeds
This smoothie was pretty! The ingredients listed above make two good sized smoothies. My to go container was full this morning!
