Mini Vacation & Carrots

Is it really Tuesday night already? The week certainly is not flying by (by any means) but at least tomorrow is hump day! (I might be celebrating a little early, huh?)

Remember back to Thursday and Friday of last week when I was getting back on track with eating more protein and less carbs? Ugh. I went on a mini-vacation on Saturday which stretched into Monday evening and my eating sort of got off track during that time. It certainly was not the worst ever vacation eating by any means, but now I have to get back on track yet again.

Friday night’s dinner turned out to be really amazing. I poached cod! I also picked up some wild grains and ate the remaining green beans to go with the cod. I will definitely be preparing this meal again soon:

I seasoned the cod with lemon zest, cumin, paprika, chili powder and a little bit of salt and pepper. I poached it in a tablespoon of olive oil, the juice of a full lemon and water. I covered the fish with foil as it cooked.

Saturday morning I got up at a decent time and got ready to head to the Cape. I had a whole grain Vans waffle with a tablespoon of Trader Joe’s almond butter. It kept me going until lunch which was pretty impressive to me. I also grabbed an iced coffee with milk and no sugar once I hit the road.

I got to my friend Sarah’s house two hours after I left my house. We went out to lunch in Dennis Port and I had an amazing lobster roll – it came with french fries and I definitely had a couple. I also had a Sam Summer with lunch, too. I did not need to eat again until dinner which we ate around 7:30 on Saturday night. I am going to tell yo what I had for dinner – FRIED CLAMS. That’s right. You only live once, and it is the only time that I knew I was going to be on the Cape for the entire summer. I was living and eating it up! I had water with dinner and after that we walked over to Sundae School where I ordered a small low fat frozen yogurt with chocolate sprinkles. It was so good!

On Sunday morning I had a blueberry muffin for breakfast and a cup of coffee. I baked blueberry muffins on Friday night for Sarah and her family – there is just something about enjoying a blueberry muffin on Cape Cod. It tasted like vacation!

I had a late lunch with a friend at Not Your Average Joe’s. We ordered vegetable spring rolls, which we split and then a roasted vegetable pizza. This pizza was pretty amazing. It tasted so fresh and I loved the vegetables on top. I have been eating the left over pizza for lunch this week, and I had a slice for dinner tonight. I was definitely left with A LOT of pizza. Even though I am going to get back onto my lower carb diet I refuse to waste food in the refrigerator. Is that fair? I hope so.

Tonight I was going to go for a run and go to the grocery store. I hate to admit that these things did not happen. Instead I’ve been cleaning the house, watering the flowers, doing laundry and started to get ready for the rest of the week ahead.

Speaking of which, I have to get back to work. But here are a few things to think about while I’m gone (I’ll be back tomorrow – don’t worry!)

I was bitten by the baking bug on Friday night. I saw this cake and I love it – I really want to make it soon. I found the cake by reading one of my favorite blogs, Orangette. I love Molly’s blog and her photography – and her book is one of my favorites, if you haven’t read it yet do so this summer!

My friend Jenny introduced me to another blog that I cannot wait to dive into soon. Have you seen or read Smitten Kitchen?? Jenny told me about this blog because I am searching for a good recipe for carrot cake or cupcakes. I really want to bake carrot cake this weekend – it is one of my favorite people’s favorite cake. I want to be able to bake a great carrot cake for his birthday in October, so I figured I should practice a few times before his birthday. I will definitely blog about the first attempt and keep you in the loop! This is the recipe I think I will be trying this weekend. I can’t wait to try it!
