Fresh Vegetables

So it has been a while since my last blog post! Last week was downright crazy at work – and I spent the weekend cooking fresh vegetables and recovering from my long week.

On Saturday I went to the Farmer’s Market on the East Side of Providence – a great time to go, there was so much amazing food! I made a ratatouille with fresh eggplant, summer squash, zucchini, onion and garlic all from the farmer’s market on Saturday night. I threw in some whole wheat pasta and chicken sausage on the side for people that like meat. I could have just eaten the vegetables – but I guess a little protein can go a long way. (Maybe?)

On Monday I went to Wilson Farms for the first time in a while. I got so much amazingly fresh food! On Monday night I made a fresh vegetable soup with chicken, fresh pasta and white beans thrown in. The vegetables were: Leek, celery, eggplant, zucchini, carrots, summer squash, shallots and fresh thyme. I loved this soup so much and had it again for lunch on Tuesday.

On Tuesday night I made dinner for my mom. Fresh eggplant parm anyone?? This turned out to be an amazing meal! I was also surprised that it did not take me quite as long as I thought it would to make the entire thing. It helped that I was making a small portion (I had one small-ish eggplant left from the farm) and a small amount of fresh pasta to go with it. I garnished it with fresh basil from my own back yard. It was wonderful and it just tasted great. I wish I had more!
